Popular in the Middle Ages, white carrots are enjoying a renaissance thanks to their distinctive creamy-white color, vigorous productivity, and mild, sweet flavor. The roots of this variety reach 8-12" in length at maturity but can be harvested sooner for smaller carrots that are just as flavorful whether eaten fresh, steamed, or roasted. Plants are half-hardy to frost and light freezes; cooking brings out their sweet flavor.

Instructions - Sow seeds outdoors 3-4 weeks before last spring frost, or as soon as soil can be worked. Keeping soil moist throughout the germination period is important to success. Ted Maiden of LaFollette, Tennessee, has grown and saved seeds from this variety since his father, Ernest Maiden, gave it to him in 1964. Ernest stewarded the variety in his own garden in Bristol, Virginia, after receiving its seeds from his father, Reverend Frank Maiden of Saltville, Virginia, at some point prior to 1956. In 2009 Ted rediscovered seed he had grown in 1987 stored in a box of photos that had remained packed during several moves he made while in the Air Force.
