Rooibos (pronounced ROY-boss) is an Afrikaans word that means red bush. Local indigenous people have long enjoyed it as a fruity, mild-flavored beverage In recent years, rooibos has experienced rapid popularity. Export to the west with the discovery that rooibos has a high antioxidant polyphenol and flavonoid content which can help build the immune system and protect the body from free-radicals that weaken natural defenses.

Rooibos is not a true tea, but a herb. The brew made from the dried Rooibos leaves is therefore a herbal infusion (known as a tisane) rather than a tea, but is widely known as Rooibos tea.

The natural citrus oil is pressed from the peel of the Bergamot citrus fruit and gives Earl Grey its distinctive taste and aroma. Bergamot is a small citrus fruit with a protruding nub like a navel orange. Earl Grey tea is flavored with oil made from bergamot peel, and has a distinctive taste loved by many. Earl Grey tea is named after Charles Grey, the 2nd Earl Grey and Prime Minister of England from 1830-1834. Legend has it that he received bergamot flavored tea as a gift after one of his men had rescued the son of a Chinese mandarin from drowning.

Earl Grey is a classic English tea time treat. Traditionally it is served with twist of lemon or a bit of sugar. Afrikaans for "red bush," rooibos comes from the plant Aspalathus Linearis, which grows only in the Cedarberg area of the Western Cape province of South Africa. Rooibos has been consumed by Bushmen as an herbal remedy for centuries, but rooibos as we know it is a relatively recent invention. Techniques for producing Keemun black tea were imported from China and applied to rooibos in the early 20th century. A difficult plant to grow, cultivation techniques for Aspalathus Linearis weren't mastered until the 1930s.

Starting in the mid-20th century, rooibos consumption became very widespread in South Africa, spurred in part by beliefs that it can help with colic in babies. Generally consumed with milk and sugar in South Africa, rooibos has rapidly attained popularity in Europe and North America over the past decade or two, where it is often drunk without any additions.
